I also use this blog as an online journal writing about the day in and day out happenings in my life which include balancing family, work and the needs of the homestead, all while keeping in mind that you have to stop and smell the roses and count your blessings along the way.

You say Potatoe, I say.......
My daughter in law Casi was so thrilled to see that there actually were potatoes growing under those plants, i'm so glad to have somebody else around who appreciates my efforts!! Here is the first batch we pulled up, a little too soon, so there were many small ones but the ones most recently are coming up bigger. I am trying to leave them in the ground and not pull them until we use up the ones we have out but at some point I am going to have to get out there and get the rest in before the bugs eat them. I have to figure out the best way to preserve some of them. Any suggestions?

Red taters, our favorites! We always keep ours in my MIL`s basement in open crates but covered with a towel. They seem to stay well down there.
ReplyDeleteI keep mine in a box in the kitchen and they stay real well. I don't have a ton of them however. I love red po-tat-toes!! Cook up with onions!! yum. ...debbie

Great harvest! I bet they are delicious. I can imagine how exciting it is to see those come up out of the ground. I haven't grown potatoes yet but hope to next year. Best wishes on your 2010 harvests!

I agree our farmer is probably doing his best to make a living but our planet can only take so much abuse and then we're all in trouble.

Mmmmm.... LOVE taters & homegrown are the BEST! They seem so much lighter & fluffier (we made mashed with the small batch we got last year). We did white taters & they are so much whiter than the ones in the store. YUM!
ReplyDeleteThose potatoes look delicious! Living in the desert doesn't provide much opportunity for gardening of any sort unless you want to compromise your water supply - it's difficult enough just keeping up with the trees. You are doing a wonderful job - how rewarding!
ReplyDeleteAs far as preserving your potatoes, I'd just suggest keeping them in a cool place--not in plastic bags, though. You probably know that already. I think the best is just to eat them and enjoy--share the surplus with neighbors or older people on fixed incomes.

ReplyDeleteLast year I cooked mine like usual (boil, drain and add salt, butter, parsly) then I froze in quart size bags. To warm, I just put them in a dish while frozen and put them in the oven as I was cooking something else. I would then add more butter and maybe shredded cheese. We had the last pack a week ago. I just dug 1/3 of my crop last weekend and will do the same with all of these. Last year I think I practiced on a bag first. You may want to try this and freeze a week, then thaw and see how you like them.
