Eggs, eggs and more eggs.
In the course of a week my two eggs a day has gone to seven eggs a day with three more about to begin laying. I am facing a case of be careful what you wish for...... I am giving away eggs to everyone I know and still have too many. Guess it is time to start looking for egg recipes.
Happy Friday everyone, its 4:30 a.m. time to milk the goats, then off to the hospital for another very long day. Such is the life I chose, it is challenging at times but I am grateful everyday for all that I have.

Hi Laura there will be heaps of egg recipes on the internet, you just have to go looking. & eggs a day is alot of eggs to use up.

ReplyDeleteYou can seperate the white from the yolks, then thoroughly beat each and then pour into ice cube trays and freeze. These work good for baking, when eggs are slim pick'en One frozen white cube and one yolk cube equals( approx. one egg)
Do you know how to make egg noodles( you can dry or freeze them), how about angel food cake( uses whites), pound cake( uses yolks), these all use lots of eggs. I have a recipe for eggs & cream sauce, you serve it over toastor buttermilk biscuits( my Grandmother's Depression recipe) Just let me know and I'll share it, it may even be on my blog, under "recipes", if not I'll share*wink*

Thanks, those are good ideas. I knew you could freeze the eggs but could not remember how. I will definitely put some in the freezer for when molting time comes along and production falls off.

ReplyDeleteThe dried beef in a jar (Armour Brand) should be in the same area as the canned meats like Spam. The other kind you may find is the Carl Buddig brand which is hanging in the meat dept. along with the lunchmeats, bacon and so forth. If you can't find it just ask and I'm sure someone can lead you right to it.
